Eating Wild Plants

By Alan Detwiler There are a number of reasons you might want to use wild plants as food. Wild plants have some unique flavors that can be among your enjoyed favorites. Watercress with something sweet such as pancake syrup in a peanut butter sandwich is one I particularly enjoy. Dandelion greens pesto mixed with spaghetti sauce is another. Since the taste of many wild edible plants is so different from the usual cultivated vegetables, you likely will at first not accept some of them as a delicious flavorful food. Just about any food flavor other than sweet, salty, starchy, and fat are, I suppose, acquired tastes. It takes time for your mind to recognize an unfamiliar flavor as a ‘tried and true’ favorite. Introduce a wild food into your diet by eating a small amount when you are most hungry. Repeatedly doing so can make the new food one that you especially enjoy. The amount of vitamins, minerals and other nutrients in wild food, according to many sources, is on the average, greater in wild foods. Domesticated vegetables have been selectively bred for looks, production quantity, taste, length of storage and other qualities other than nutrition. The fruits and vegetables sold in the supermarket have been chemically fertilized; exposed to herbicides, pesticides, fungicides, and a variety of other chemicals; and they may have been genetically modified and/or irradiated. The safety of eating such produce is of concern to many people. Wild foods for the most part, avoid those concerns. If you do gather wild foods avoid taking them from along roadsides, lawns that have been treated with chemicals or any other areas that may have been treated. There is the possibility that supermarket food can be contaminated with pathogens. Dozens of diseases can be spread by an infected person handling food anywhere from the time it is harvested until it is put into your grocery bag. Plants growing in the wild are untouched by human hands. Wild plants can be prepared in many ways. Greens can be put through a food processor or blender to make pesto. Add just enough oil and/or water to let the mixture process well. The pesto can then be easily mixed with other ingredients such as peanut butter, tomato sauce, or syrup for flavoring. Some greens such as lambsquarters, chickweed and purslane can be used anyway spinach is prepared. Strong or bitter tasting greens can be boiled changing the water once or twice to reduce bitterness. This is sometimes done with dandelion leaves. Then other ingredients can be added for flavoring and texture. Wild fruit can simply be mixed with nuts or seeds such as sunflower seeds or almonds. Some plants such as cattail tuber shoots and burdock root can be boiled to increase tenderness or to reduce strong flavors and then simply eaten as is. Be sure of what it is that you are going to eat and be sure that it is edible. Consult a good reference book. If possible have someone who is familiar with a particular plant point it out to you. Most photographs are not of high enough quality to be relied upon to positively identify a wild plant. Some edible plants have poisonous look-alikes. Some plants have edible parts and have poisonous parts. Some plant parts are edible only after being prepared in a particular way. It is common that a small quantity of a plant can be eaten without problems but if you eat too much your digestive system will protest forcefully. There’s about 6 or 8 disaster scenarios that I can think of that seem likely to happen at some time. Most of them seem unlikely to happen in my lifetime. But you never know. Isn’t it prudent to be prepared, at least to some extent, in the event the normal food supply is interrupted. Examples of disasters that seem likely to happen are an asteroid hitting the earth, a massive nuclear war, a global epidemic, and the failure of one or two major crops such as corn and wheat due to a widespread disease or climate change. The gathering of wild foods is interesting and enjoyable. Foraging for a favorite or new addition to your menu may take you through woods, through open fields and meadows and other places of beauty. It is a great way to get out into the natural world and enjoy its complexity and majesty. It adds to the perception that the world is a good place that is to be enjoyed. It is emotionally pleasing to find something that seems free and of exceptional value. Making use of natural foods gives you greater awareness of the inter-relatedness of living things to each other and to the environment. That greater awareness helps us more appreciate the weather and climate, the abundance of nature, agriculture and the food supply, and the importance of protecting those things. By Christine Sutherland Despite Legislation for Equality, the Big Picture Hasnt Changed for Women in Professions or Business In civilised countries around the world, equal pay has been enshrined in law for over 40 years. Yet even today women in professions are being paid roughly 75 cents for every dollar men receive, for the same work! Over a lifetime of work, a woman can expect to lose about $455,000 due to unequal pay. Thats why women have less to set aside for their future, and why they struggle to build up solid asset bases. Thats also why women receive smaller superannuation payouts. Astoundingly, by the time a woman retires, her superannuation pension will be only about 50% of the average mans! Why its Not Just a Womens Issue This inequity in payment rates doesnt just disadvantage women–it also disadvantages their children and their partners. When women are not paid what they are worth, their whole family suffers. And in fact when women are generally undervalued in this way, we end up with a society that both subtly and overtly disadvantages and disables women to the extent that they are simply unable to contribute their rich potential to their families, companies, social groups, and the wider community. In corporations where women are conspicuous by their general absence from boards and positions of senior management, those companies perform some 15% worse than companies that have even just 2 women on their boards. The proof of womens worth is there for all to see, all the way to the bottom line. The economic empowerment of women is a cause we should all be working for because it is the only way women will gain the space and the independence to widely contribute their expertise for the benefit of all. Why is This Ridiculous Situation Still Happening? The key factors in womens failure to succeed in professions or business to the degree that men do have now been identified. Often a patriarchal culture is blamed, and its true that biases and prejudices against women do play a part. These cultural biases can prevent us from noticing even the obvious, for example that full-time working women are still doing 400% more housework than their male partners. However of far more importance and significance are two other factors which women can and should take control of: Women have not sufficiently realised the importance of mentoring as an aid to rapid and smooth success Having an experienced mentor has been identified as the single most significant predictor of success. However female mentors are not as obvious as male mentors, and it can be particularly difficult to locate a female high achiever simply because there are so few of them. Before you start thinking of the difficulties this implies, consider that the single mentor pattern is a male pattern which is based on the cult of the individual. Women are team-focussed rather than self-focussed and this is one of their greatest strengths, and one of the reasons their contributions have such exponential leverage. The good news is that by peer-mentoring in groups, far more progress is made, more quickly. Certainly weve noted that whenever weve provided the environment for such mentoring the outcomes in terms of personal and professional development, and the doors that have so quickly and freely opened, have been outstanding. Working with a mentor or mentors neednt take a lot of time, and can even be done on-line so that you can participate no matter where you are, all in the convenience of your own time and at your own computer. Business networking has been misunderstood and undervalued This activity has been identified as the single most effective way of developing careers and businesses. 70% of business comes from referrals, and the great majority of referrals come from other business people whom weve spent enough time with for them to refer intelligently and in bulk! Well, remove the word diet from your vocabulary forever and be on your way to a leaner healthier you. It’s a proven fact that dieting is only a short term fix to a lifelong struggle. We change our eating habits, achieve our desired goal and then return to our old habits again. This is characterized by those yo-yo dieters you’ve heard so much about. Not only is the behavior depressing especially for those who lose the weight just to gain it all back but it’s also extremely unhealthy. The key to successful weight loss is changing your lifestyle. If you want true success, the healthy habits you incorporate to lose those extra pounds are the same habits you must keep to insure that the weight won’t return. Here are a few tips to help you modify your behavior to achieve and maintain your target weight. Drink plenty of water. 6 to 8-eight ounce glasses daily is great. However 8 -10 is magnificient. Water gives the sense of fullness and flushes your system of impurities. If you love fast food - it’s okay. Have a kids meal instead of that super size meal you normally treat yourself to. Avoid fried foods as much as possible. Bake, broil, and/or boil your meats. Your waist and heart will thank you. Avoid processed foods as much as possible. Most of these foods are very high in sodium and other harmful preservatives.Fresh meat and veggies are best. A good rule of thumb I live by regarding meat is: If I don’t have to cook it to eat it - I don’t need it! Eat plenty of fruit. Most fruit is high in fiber which adds a boost to your metabolism. If you must eat after 6pm, make sure it’s fruit or a low calorie, low fat snack. Never lay down after meals! This is like nails in your coffin. Stay up atleast 30 minutes to a hour after eating. In the long run this can also prevent problems with indigestion, acid reflux and other gastrointestinal problems. Start counting your calories. There are some who recommend low fat, low carb, low cholesterol. However low calorie is most important. It is increased caloric intake that causes weight gain. Remember that. If you know what’s going in, you’ll know what needs to come out. Finally, exercise, exercise, exercise. Some form of exercise for atleast 30 minutes each day will burn additional calories and improve your overall endurance and health. Using the caloric mechanism for weight loss is a bit like manually cranking a lever to open your garage door inch-by-inch and then having to hold the door open. When you consume EPA or DHA, both omega-3 fatty acids, they access a metabolic gateway called the PPAR receptor, to activate genes that increase your metabolism, help you burn fat, and assist you in processing bodily glucose more effectively so that foods won’t get stored as fat. It’s as if the EPA and DHA opens up an extra lane on your hormonal superhighway, making for a smooth and easy route towards slimness and health. That’s why, for automatic weight loss, I recommend adding EPA and DHA (both found in fish oil) to your diet, beginning today. On the other hand, unhealthy transfats (such as found in many processed and fast foods) act as a metabolic roadblock to weight loss, and if you eat them, you may find yourself crawling along at a snail’s pace, going nowhere. Rising Raisins and Pop Bottle Fountains - A Science Inquiry Experience - Part 2

By Thomas Smith In Part 1 of this experience, students worked with “Rising Raisins”. There they found that bubbles prefer to form on a surface and just not come out of solution on their own. Here, we take that knowledge and attempt to get lots of bubbles to form in one small area to create a “Pop Bottle Fountain”. For this, you will need a two liter bottle of seltzer water. Soda will work fine but it tends to make a sticky mess. Seltzer water will just evaporate leaving no sticky residue. As far as clean-up is concerned, seltzer water is the winner. You will also need a hammer, nail, a piece of string about two feet long, some tape, and a candy Menthos. Menthos are mint flavored chewy candies found in the grocery check-out. There are six or eight in a package. Have the students make observations about a Mentho. They will note that its white, smooth, and not round. Ask them to observe the shell more closely. It really isn’t as smooth as it appears on first glance. What do you think will happen if we place this in seltzer water? Carefully remove the cap from the seltzer bottle. Some gas will escape. Don’t worry. Place the cap on the sidewalk so that the top is facing up. In this way something could be hidden under it, but that’s not what is going to happen. Using the hammer, pound the nail through the top of the cap to make a hole. You are done with the hammer and nail. Run the string through the hole so that the cap is halfway up the string. Attach one Mentho to the end of the string that is going into the cap. Use some tape to do this. This attachment will be flimsy at best. Draw the attached Mentho up into the bottle cap by pulling on the string that leaves the top of the cap. Screw the cap (with the Mentho inside) tightly onto the bottle. Do not let the Mentho touch the seltzer water. You’re ready for the fountain. Make sure it is pointing at no one. Count down, “Three, two, one!”, and pull the string. The Mentho will be freed from the string and tape and drop into the seltzer water. There, the Mentho will provide lots of surface for bubbles to form very quickly. The pressure will build inside the bottle and the water will spray from the bottle as a gorgeous, though short lived, fountain. Quite exciting, indeed. Did the students guess correctly?
